Soda Bean Soup
2 cups 1/2 inch cubes cooked ham (optional)
1 15 oz. can diced tomatoes in juice, drained
1 15 oz. can pork and beans, rinsed and drained
1 15 oz. can black beans, rinsed and drained
1 15 oz. can lima beans, rinsed and drained
1 15 oz. pinto beans, rinsed and drained
1 lg. onion, chopped
1 lg. red bell pepper, chopped
1 lg. green bell pepper, chopped
1/2 cup dk. brown sugar
2/3 cup cola-flavored soda
2/3 cup lemon-lime soda
2 tsp curry powder
1/2 tsp dried savory
1/2 tsp garlic powder
1/4 tsp cayenne pepper
Place all ingredients in a heavy, large pot and bring to boil over medium high heat stirring until sugar dissolves. Reduce heat to medium and simmer uncovered until juices are thick, stirring gently and frequently to prevent burning; about 20 minutes. Season with salt and pepper if desired. Garnish with grated cheese (extra sharp or parmesan, etc) only if desired; not necessary for great flavor.
This makes 10 cups.
VENUS DE MILO SOUP
1 lb. hamburg 2 sticks celery
1 onion 2 beef cubes
1 pkg. onion soup mix 2 qts. water
1 bag frozen mixed vegetables 1 can tomatoes
½ can tomato paste parmesan cheese
Salt & pepper Orzo or any pasta
Slightly brown 1 lb. hamburg.
Add: 2 sticks celery sliced, 1 onion cut up, 2 beef cubes, 1 pkg. onion soup mix,
2 qts. water, salt & pepper, 1 bag frozen mixed vegetables, 1 can tomatoes,
½ can tomato paste.
Bring to a boil. Lower heat, cover & simmer 20-25 minutes.
Cook orzo or any pasta separately, & serve soup over pasta.
Sprinkle with Parmesan cheese.
